Ingredients:
- 3 tablespoons low fat mayonnaise
- 3 tablespoons low fat sour cream
- ¾ teaspoon curry powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 3 large hard boiled eggs, coarsely chopped
- 5 large hard cooked egg whites, coarsely chopped (reserve the yolks for another use)
- ¼ cup finely chopped celery
- ¼ cup finely chopped green onions, with tops
- 3 tablespoons minced dill pickles
Directions:
1. In a medium-sized bowl, whisk the mayonnaise, sour cream, curry powder, salt, and pepper.
2. Fold in the remaining ingredients.
3. Serve on curly lettuce leaves. Can be used as ingredients for a great Egg Salad Sandwich.
